Aaron Huntsberger is an independent wine consultant based between Mexico City and Austin, Texas. With a background in premium winemaking and experience overseeing acquisitions, rebranding, and digital transformation across multiple wineries, Aaron brings a deep understanding of wine, hospitality, and brand development. His work spans private cellar curation, wine list design, staff education, and hospitality strategy, always with a thoughtful, minimal, and sensorial approach.

In 2023, Aaron launched Olfacto, a consulting studio specializing in wine programs for restaurants, retailers, collectors, and hotels. At Olfacto, each offering is tailored to its context—whether that means crafting a seasonal wine list, training a front-of-house team, or curating a bottle program that tells a story. Services balance strategy with taste, and always consider the role wine plays in place, memory, and experience.
